PURPOSE:To produce the titled compound useful as a preservative and fungicide for food, economically in an industrial scale, in a state preservable for a long period, in high quality, by mixing a slurry of sorbic acid directly with activated carbon, and carrying out the neutralization reaction in the presence of activated carbon. CONSTITUTION:The titled compound is produced by neutralizing sorbic acid with an alkali (preferably hydroxide, carbonate, dicarbonate, etc. of potassium) in an aqueous medium in the presence of activated carbon. The activated carbon can be classified into gas-activated carbon and chemical-activated carbon, in which gas-activated carbon is preferable. Concrete examples of the carbon are SHIRASAGI-A and SHIRASAGI-M, etc. (Commercial names of the products of Takeda Pharmaceuticals Ind. Co. Ltd.). The amount of the activated carbon is about >=0.1%, preferably about 0.5-4% based on the sorbic acid. The concentration of the alkali added to the sorbic acid is preferably nearly saturated concentration; i.e. about 49% for potassium hydroxide and about 50% for potassium carbonate.
