PURPOSE:To produce an oligopeptide mixture having excellent nutrition-improving effect to a person of undernutrition or a patient under medical care, from soybean whey, in high yield, by carrying out the restricted hydrogenation and the specific hydrogenation of soybean whey protein under respective specific conditions. CONSTITUTION:Soybean whey protein separated from soybean whey is subjected to the restrictive hydrolysis with thiol protease or carboxyl protease in an aqueous system at 7-11 pH. The obtained polypeptide mixture is specifically hydrolyzed with serine protease or proline-specific peptidase to obtain the objective oligopeptide mixture having a molecular weight of 500-1,500 Dalton (preferably 700-1,000 Dalton).
