<p>The method is intended for producing cheese whereby the prepared curds are pumped to a whey draining and cheese moulding unit. A gas, preferably air, is injected in the line between the pump and the unit, preferably at a rate of 0.5-5 litres/h or rather 1-2 litres/h. The air is preferably injected using a peristaltic pump connected to a stainless steel tube which extends into the line and is provided with a 30-60 deg., preferably 45 deg. bend at its end in the direction of flow leading to a 0.05-0.5 mm, preferably 0.1-0.3 mm diameter outlet orifice.</p> |
