摘要 PURPOSE:The titled sherbet that is prepared by freezing a mix containing jammed skin and pulp of UME (Japanese plum), lemon juice, whipped albumen, liqueur and syrup, thus being suitable for desert for adults, because of its appropriate acidity and good refreshness. CONSTITUTION:Syrup is combined with jammed UME, lemon squeeze, whipped albumen and liqueur and they are frozen to give the objective sherbet. The syrup preferably has a saccharinity of 18 deg. and the UME is a salted product of reduced salt content, 15%.
