A dynamic storage system for sensitive prods., e.g. cheese, in moulds for the dewatering, acidification and maturing operations, consists of a line of one- or two-deck storage cells with cross rails for wheeled trolleys carrying the cheese moulds and closed by doors. Loading and unloading rails run along both sides of the line. They carry the trolleys in suspended transfer units which can move the trolleys sideways in the cells and lift them up to engage their couplings. The trolleys can also be turned right over in them.
