A falling stream evaporator comprises an evaporator chamber (8) at the top, a heating chamber (5) in the central zone and a vapour chamber (13) at the bottom, all housed within a vertical, cylindrical vessel of generally constant dia. The vapour chamber at the bottom comprises a juice inlet connection (22) and separator. Inside this vapour chamber (13) an annular space (19) is defined inside the outer vessel wall by a guide ring (16), esp. of truncated conical downwardly tapering shape, fixed at its upper edge below the bottom tube plate (4) of the heating chamber and having a top dia. at least equal to the dia. of the heating tube bundle, (5). The bottom dia. (D) of this guide ring (16) is at most equal to the dia. of the collector sump (17). The distance (H) from the bottom edge of the guide ring (16) to the top edge of the sump (17) is at least equal to one -quarter of the bottom dia. (D).
