A process treatment for making food preparations which have extremely low microbial counts (microbial count < 100/g), in particular for baby and infant food, even from raw materials which are highly contaminated with microbes, where, combined with these properties, a piecewise, but instantly dissolvable consistency of the preparation with good water uptake properties and good processability is achieved, provides for preheating of the finely-divided and thoroughly mixed mixture of the starting substances, first to a homogeneous temperature of 100 to 160 DEG C, preferably 110-150 DEG C, followed by short-term heating of the uniformly warmed mixture to a temperature of up to 160-180 DEG C, preferably for approx. 2-3 seconds. An embodiment which is possible provides that this 2-step heating, in particular the short-term heating, is carried out in an extruder, preferably under a pressure of up to 120 bar. <IMAGE> |
