The invention relates to a seal, in particular for fittings, which have to meet sanitary requirements, the seal being arranged within a housing cover and sealing off an axially movable rod which passes through the latter. The shaping of a seal of this kind ensures that the sealing surfaces exposed to the medium to be sealed off are easy to clean and that, when subjected to pressure by the medium within the annular gap between the rod and the housing cover, the seal is pressed uniformly against the components surrounding it. The seal 1 has, inter alia, an end face (1a, 1b) which falls away approximately symmetrically like a roof towards the rod (5) on one side and the housing cover (2) on the other side from a continuous circular apex line S, in the direction of the negative pressure gradient of the medium at the sealing location (Fig. 2). <IMAGE>
