PURPOSE:To carry out the uniform thawing of a food as a whole, without raising the surface temperature, utilizing the heat generated by the dielectric loss, by immersing a frozen food in water filled in a vessel, and applying a high-frequency potential to the electrodes placed to both sides of the food. CONSTITUTION:High-voltage electrodes 2 are placed in the vessel 1 connected with the earth electrode 3. Water 5 is filled in the vessel 1, the frozen foods 4 are immersed in water 5 between the electrodes, and high-frequency electric potential of several tens - several hundreds kHz is applied from the electric source 6 to the electrodes 2, 3. The heat generation caused by the dielectric loss is concentrated mostly to the ice and the heating of the water is negligible. Furthermore, since the dielectric loss of the ice decreases rapidly with the temperature increase, the ice having lower temperature has higher heat-generation, resulting in the uniform thawing of the frozen food.
