PURPOSE:To reduce the difference between the surface temperature and the core temperature of a frozen food, and to effect the thawing of the frozen food quickly and satisfactorily, preventing the drying of the surface, by using far infrared radiation radiated from a far infrared heater in combination with cold humid air. CONSTITUTION:The frozen food 4 is placed on the shelf 3 of the thawing chamber 2 of the thawing facility 1, and the far infrared heater 5 is energized to emit infrared radiation of about 6mu wavelength having high absorptivity in water at 160-180 deg.C. At the same time, water 17 chilled at 1-2 deg.C is pumped with the feed pump 13 from the chilled water tank 15 through the pipe 13 and the spraying tube 12 to the nozzle 11 and sprayed into the chamber 9 for generating cold humid air. The sprayed water is sent together with the air sent from the blower 10 to the thawing chamber 2 through the duct 8, and the cold humid air is passed around the food 4 along the direction of the arrow and exhausted from the exhaustion port 7. The food can be thawed by the combined action of far infrared radiation and the cold humid air.
