PURPOSE:To prepare instant carp cooked in bean soup having eatable bones without collapsing slice shape of it only by heating it before eating, by seasoning preliminarily slices of carp cut in cylinders, sealing them within a container having a great number of fine small holes, pressurizing and heating them, allowing them to stand to cool them, adding a seasoning solution to them, subjecting them to vacuum packaging. CONSTITUTION:Slices of carp cut in cylinders are preliminarily seasoned, optionally half roasted, and sealed in a container consisting of a material harmless with respect to food sanitation, having a great number of very small holes not to leak a seasoning solution. They are pressurized and heated until bones become sufficiently soft, the treated slices are taken out from the container, heat is released, a proper amount of the seasoning solution is added to the slices, which are subjected to vacuum packaging. Instant carp cooked in bean soup having eatable bones, showing good taste and high quality, standing preservation, prepared only by heating it for a short time before eating and by simple cooking without collapsing slice shape, is obtained. |
