The process for obtaining substances rapidly frozen (deep-frozen) in the desired final pieces and/or shapes, according to the invention, comprises a freezing stage in which the substances to be frozen (deep-frozen), already in the desired final pieces and/or shapes, are directly immersed in or coated with a cooling fluid that is incompatible and immiscible with and inert in respect of the said substance. This stage can advantageously be followed by a stage in which the cooling fluid present in the frozen substance is removed when the latter emerges from the above freezing (deep-freezing) stage. This freezing stage can also be preceded by or include a stage in which the substance to be frozen is formed into the desired pieces and/or shape.
