PURPOSE:The titled grafting agent, obtained by bringing a free amino acid ester of p-toluenesulfonic acid expressed by a specific formula into contact with an alkaline medium, and eliminating p-toluenesulfonic acid, and having improved emulsifying and humectant property. CONSTITUTION:An amino acid alkyl, ester of p-toluenesulfonate is brought into contact with an alkaline medium, e.g. NaOH, and salted out preferably in the presence of a salt, e.g. NaCl, to afford a free amino acid ester expressed by formula I [R1 is amino acid residue; R2 is (un)saturated hydrocarbon], etc. The resultant amino acid ester and a hydrophilic protein, e.g. casein, are subjected to enzymic reaction. USE:An emulsifying agent for cosmetics and foods. |
