PURPOSE:To prepare a granular jelly substance in high productivity, by extruding a solution capable of forming a coagulated material from an extrusion die to a coagulating solution, cutting the extruded material at the surface of the extrusion die by a cutter, coagulating the extruded material in the coagulating solution. CONSTITUTION:A solution (e.g., pectin-containing aqueous solution) capable of forming a coagulated material is extruded from the extrusion die 2 to a coagulating solution (e.g., calcium lactate-containing aqueous solution), the extruded material is cut at the surface of the extrusion die 2 by the cutter, and the extruded material is coagulated in the coagulating solution. Consequently, a granular jelly substance can be prepared in high productivity. |
