PURPOSE:To produce a CHIKUWA (a bamboo-shaped steamed fish paste) having uniform quality, high elasticity and density, and excellent preservability, by heating the raw material of CHIKUWA with far infrared radiation, thereby enabling the remarkable reduction of heating time, and the uniform heating of the product from the surface to the core. CONSTITUTION:The raw material of CHIKUWA is wrapped around a core rod by conventional method, optionally left to stand in an aging apparatus, and heated with far infrared radiation in a radiation chamber emitting the radiation of 4-1,000mu wavelength. The product is colored and roasted as necessary. |
