Aqueous smoke flavorings are freeze concentrated to derive concentrates with the same relative quantities of acids, phenols and carbonyls, but with more stability and less water, than the stock solutions. The freeze concentrates are used with or without dilution to flavor foodstuffs by atomization, spraying, dipping or injection. |
