PURPOSE:To prepare a seasoned food resistant to the browing during the preparation, storage and distribution, and resistant to the lowering of the quality caused by browing, by using potassium L-glutamate as a part of the raw material. CONSTITUTION:At least a part, usually >=20% of sodium L-glutamate is substituted with potassium L-glutamate, in the preparation of a seasoned food at least containing sodium L-glutamate and sugar, e.g. retort food, seasoned dry fish, pickles, boiled fish paste, MISO (fermented bean paste), liquid seasoning, etc. |
