PURPOSE:To carry out the chilled preservation of a food without causing deterioration in quality thereof, by quickly cooling the food temporarily utilizing freezing cold, sensing the temperature reaching the chilling temperature, excluding the cold at a little lower temperature than the freezing temperature. CONSTITUTION:A perishable food, e.g. dressed meat, is quickly cooled with freezing cold in a refrigerator controlled at a considerable lower temperature than the freezing temperature by a quick cooling refrigerating machine. On sensing the temperature reaching a chilling temperature a little lower than the freezing temperature, the freezing cold is compulsorily excluded, and the temperature is quickly fixed at a chilled preservation temperature a little lower than the freezing temperature of the food to be preserved in a chilled preservation cabinet with the chilled cold of the chilled preservation cabinet controlled at a chilling temperature a little lower than the freezing temperature by a chilling refrigerating machine to carry out the chilled preservation of the food.
