PURPOSE:To measure lipase activity accurately and simply, by using a fatty acid ester of alochol polymer as a reaction substrate of lipase. CONSTITUTION:A fatty acid (e.g., oleic acid, etc.) is linked to an alcohol polymer (e.g., polyethylene glycol, etc.) by ester bond to give a water-soluble alcohol polymer fatty acid ester (e.g., polyethylene glycol oleate, etc.), which is used as a reaction substrate, treated with lipase, and decomposed into the alcohol polymer and the fatty acid. The change in the reaction is determined (e.g., colorimetry, etc.), to measure lipase activity.
