PURPOSE:To provide the slices of fried sweet potato chips having coarse inner texture containing a large number of cavities, having specific density, oil-content and sugar-content, giving soft feeling to the tooth, keeping the natural sweetness of sweet potato, and free from the stickiness of the oil. CONSTITUTION:The objective snack cake is the slices of fried sweet potato chips of 0.5-5mm. thick, having a coarse inner texture containing a number of cavities and a specific gravity of 0.5-1.25, and containing 10-25wt% oil and 10-40wt% sugar. |
