PURPOSE:The titled composition, obtained by incorporating a specific polyglycerol ester of a fatty acid with a liquid or fluid fat or oil, and capable of facilitating the handling by extending in the form of a thin film in a processed wheat flour food and giving improved sense of eating. CONSTITUTION:Glycerol is condensed in the presence of an alkali under heating and purified with an ion exchange resin, etc. to give a polyglycerol having 2- 10mol average condensation degree, which is then incorporated with a straight- chain fatty acid, e.g. oleic acid, having 1-3 unsaturated bonds in an amount to esterify 20-85% hydroxyl groups in the polyglycerol and esterified in the presence of an alkali catalyst to afford a polyglycerol ester of the fatty acid. 0.3- 15wt% resultant ester and if necessary another emulsifying agent are dissolved in a fat or oil, e.g. white rapeseed oil, to give the titled composition. |
