摘要 PURPOSE:To prepare expanded snack having particular flavor of potato by simple processing at low cost, by blending potato flakes as a main raw material with alpha waxy starch to give a dough ingredient, rolling it into a sheet, punching the sheet into a desired shape, baking it. CONSTITUTION:30-80wt% potato flakes as a main raw material are uniformly blended with 10-60wt% alpha waxy starch and 0-30wt% shortening, the blend is kneaded with cold water to give a dough ingredient, which is rolled into a sheet with 0.5-2.0mm. thickness, and the sheet is punched into a desired shape and baked. By using the potato flakes as a main component and blending it with the alpha waxy starch, an expanded potato snack can be baked from one sheet without heating as in an existing technique. The tasty expanded snack like potato is prepared by simple processing at low cost.
