The invention relates to a preparation, to be eaten as a whole, of slicing sausage in the form of a salad or brawn, made of slicing sausage, meat loaf and vegetables, hard-boiled eggs and/or cheese in sliced form as solid constituents and an aqueous or gelled constituent which fills the space between the individual solid components in a sealed container. The preparation has the form of a pasteurised full preserve in an air-tight container. The slicing sausage is composed of an essentially homogeneous sausagemeat, and the aqueous component has a pH of below 4.5. The preparation is made by comminuting meat and, if appropriate, fat with an addition of ice to give a stuffing, adding an emulsion, and mixing this to an essentially homogeneous sausagemeat, this subsequently being processed in the conventional manner to give a slicing sausage, which is sliced, mixed with sliced vegetables, sliced cheese and/or eggs and, if appropriate, spices, the acidic, aqueous component is added, and the salad formed is then pasteurised in a tightly sealed container. |
