The subject of the invention is a method and an installation for controlling an operation for electrical arc-welding a joint 30 on a metal workpiece 3. The installation comprises an electrode 11, means for conveying the electrode along the joint to be welded and means for adjusting the various welding parameters. According to the invention, the temperature t of the workpiece 3 to be welded to the face 35 opposite the electrical arc 10 is measured during the welding; the measured temperature t is compared with a reference temperature t' determined in advance and corresponding to the maximum penetration of the arc into the thickness of the workpiece 3 without risk of the metal flowing and, as soon as a variation in the measured temperature t with respect to the reference temperature t', greater than a given deviation is measured, in one direction or the other, an adjustment operation is carried out, in the desired direction, on at least one of the welding parameters in order to bring the measured temperature to the reference temperature. <IMAGE>
