Process for extracting carboxylic acids containing structural units of the formula >N-CH2-COOH from the alkali metal salts or alkaline earth metal salts thereof by electrodialysis of the aqueous solutions of the salts in the central zone of an electrolytic cell, which is divided by semipermeable separating walls into a cathode zone, an anode zone and a central zone, the anolyte used being an aqueous acid and the catholyte being an aqueous solution of an electrolyte.
