PURPOSE:To obtain the titled compound without forming lumps, suppressing the swelling with alkali, in high efficiency, by dispersing tamarind seed gum in an aqueous solution of a hydrophilic organic solvent such as n-propyl alcohol, and treating the solution with an alkali and an etherification agent. CONSTITUTION:The objective compound can be produced by the carboxymethylation of tamarind seed gum in a state dispersed in an aqueous solution of a hydrophilic organic solvent. The carboxymethylation is carried out by using a 60-95% aqueous solution of an organic solvent selected from n-propyl alcohol, iso-propyl alcohol, tert-butyl alcohol and acetone as the hydrophilic organic solvent in an amount of 1-20 times weight of the tamarind seed gum, dispersing tamarind seed gum in the solution, and reacting with an alkali and an etherification agent (e.g. sodium monochloroacetate).
