The steam peeler comprises a stationary pressure vessel (10) with an introduction opening for the product to be treated at the top and a removal opening for the treated product at the bottom. During the peeling operation, the openings are closed by means of pressure plugs (16 and 18 respectively). In order to achieve uniform steam distribution within the product to be treated, an inner cage is arranged within the pressure vessel (10), the said inner cage having a perforated wall and being provided at a distance from the inner wall of the pressure vessel (10). To mix the product thoroughly with the steam, either a stirrer or a steam distribution system is provided within the pressure vessel (10). In order to achieve economic utilisation of the steam, there is, in addition to a fresh-steam feed system (20, 22, 24, 26), a steam circulation system, steam being drawn off (at 34) near the top of the pressure vessel (10) and this steam being passed via a compressor, which can be designed as a mechanical compressor (40) or as a steam jet compressor, in order to be fed in again under pressure (at 46) at the bottom of the vessel. The installation is equipped with a venting device and a condensate draining device.
