PURPOSE:To obtain a low-molecular peptide composition consisting essentially of a peptide having 2-5 average amino acid chain length, by reacting protease having an optimum pH on the alkaline side with a protein in an acidic - neutral aqueous medium. CONSTITUTION:An alkaline protease having an optimum pH at 8-11pH is reacted with a protein in an acidic - neutral aqueous medium at 5.0-7.0pH. The protein is hydrolyzed into a peptide of 2-5 amino acid chain length but not further. The alkaline protease can be more easily isolated and separated than bacteria of the genus Bacillus, is easily available as a commercial product and usable at a relatively high temperature of 50 deg.C or above.
