PURPOSE:To obtain a coffee solution having good flavor, by spraying an aqueous solution containing ethanol and an emulsifying agent upon roasted coffee beans, freezing them, grinding them, followed by extracting them. CONSTITUTION:Roasted coffee beans are sprayed with an aqueous solution containing 5-25wt% ethanol and 0.01-0.5wt% emulsifying agent. An amount of the equeous solution sprayed is preferably 10-100kg based on 100kg coffee beans. The coffee beans are preferably pressurized, frozen, ground, and extracted further, to give the desired coffee solution.
