摘要 The subject of the present invention is a method for the accelerated aging of fresh bread. According to the invention, the fresh bread is partially dried under vacuum, the extraction of water being limited to about sixty grammes per kilogramme. The invention makes it possible to cut the loaf by machine soon after it emerges from the oven.
