PURPOSE:To made it possible to sterilize and preserve a solid food, e.g. a fish or shellfish, containing water, by putting the solid food in a given container, smearing magnesium chloride, etc. almost uniformly therewith through a spray, etc., and sealing the container. CONSTITUTION:A solid food 1, e.g. a fish or shellfish, animal meat, fruit or vegetable, containing water is put into a given container 2, and magnesium chloride 3 is almost uniformly smeared with the solid food 1 through a spray, etc. The container 2 is then sealed with a sealing member 4. As a result, cells and tissues of the solid food 1 containing the water can be kept in the intact state without change, and sterilization and preservation can be carried out.
