PURPOSE:To prepare a food raw material and feed having high nutrient value and preservable for a long period without causing the emission of ill odor and generation of bitter or astringent taste, by heat-treating bean curd refuse under reduced pressure using a hot oil as a heating medium. CONSTITUTION:An oil such as animal oil, vegetable oil etc. or their mixture is heated in a closed vessel at about 80-120 deg.C by incident heating, and bean curd refuse is thrown into the hot oil. The vessel is closed and evacuated while keeping the oil temperature at the above level and stirring the content of the vessel. The evacuation is started from the moderate vacuum of about 10-20mm.Hg, and then proceeded to a nearly complete vacuum of about 650-750mm.Hg to dehydrate the bean curd refuse to a water-content of about 3-6%. The bean curd refuse is taken out of the vessel, deoiled, and crushed to obtain the objective food raw material, etc. |
