PURPOSE:To produce the titled powder having improved processability for white sauce or roux, etc., by pressure molding grain flour and/or starch with a specific moisture content, heat-treating the pressure molded grain flour, etc., and pulverizing the heat-treated molded grain flour, etc. CONSTITUTION:Grain flour, e.g. wheat flour, or starch, e.g. potato starch, or both adjusted to 10-28% moisture content are pressure molded under 20-250g/ cm<2> pressure to give a molded article having 0.7-1.5g/cm<3> density. The resultant molded article is then heat-treated at 70-130 deg.C for 10-60min, cooled and pulverized. |
