Vegetables are first washed and then rasped to produce a pulp. This is then sieved to extract required components. Both the rasping and sieving are carried out in oxygen-lean and pref. vacuum surroundings. Pref. the vacuum is maintained by delivering the raw vegetables via a hydraulic head, and discharging the pulp via a pump. - Pref. the pulp sieve uses multiple stages each with a sieve bend through which the pulp is passed at high speed. Liquid removed in downstream sieves is passed counterflow to the adjacent upstream stage. - Foam formation is minimised and thus the vol. of the appts. can be reduced.(0/5)
