PURPOSE:To reduce the unevenness of the rate of heat-transfer to cans, by furnishing an autoclave with three pipes to introduce steam at the bottom and one pipe to each side of the autoclave, putting the cans in a basket provided with an inner partition plate having double-layer structure, and putting the basket into the autoclave. CONSTITUTION:In the preparation of canned food or drink to be sterilized at >=100 deg.C, the food or drink is sterilized at 130-150 deg.C for 5-50sec with an ultrahigh-temperature sterilizer, and packed in a can. The autoclave 1 is furnished with the pipes 2-6 to introduce steam in the autoclave, wherein three pipes are placed at the bottom of the autoclave and a pipe is placed to each of both sides. A water-spraying nozzle 8 is attached to the cooling water-introducing pipe 9. Cans 12 are put into the basket 10 furnished with inner partition plates 22 having double-layer structure, and the basket is put into the autoclave 1 and sterilized for a short time at a high temperature, i.e. at 125-140 deg.C. The unevenness of the rate of heat-transfer to the cans in the autoclave during heating can be reduced, the quality of the content of the can is improved, and the time for the heating of the autoclave is shortened by this process.
