PURPOSE:To obtain an oil-in-water-in-oil type emulsified fat or oil composition having improved absorbability of vitamin E, by incorporating a medium-chain fatty acid triglyceride and the vitamin E in an internal phase oil. CONSTITUTION:A fat or oil composition obtained by incorporating >=20wt%, based on an internal phase oil, medium-chain fatty acid triglyceride containing a 6-12C saturated fatty acid having an even number of carbon atoms as a constituent fatty acid and a necessary amount of vitamin E in the internal phase oil of an oil-in-water-in-oil type emulsified fat or oil composition. |
