DRIED POWDERY FOOD OF YAM AND PRODUCTION THEREOF

PURPOSE:To produce a preservable dried powdery food of a yam reconstitutible into a state similar to that of a grated yam ''grated'' in an earthenware mortar or grater by adding water thereto. CONSTITUTION:After removing stuck soil or dirt completely from a yam, the epidermis is peeled to wash the peeled yam. The washed yam is then pulverized in fluidized condition so as not to generate heat at 60 deg.C or above by pulverization. The pulverized yam is then vacuum dried or the peeled yam washed with water is freeze-pulverized and then freeze-dried.
