The invention relates to protein concentrates and food-preparations containing bioactive substances as well as animal and/or plant proteins and metal ions of mineral and medicinal water, and optionally further additives. These protein concentrates and food-preparations are prepared by mixing animal and/or plant substances containing protein with mineral or medicinal water, reaching the mixture under heat treatment or at ambient temperature, then optionally after the addition of additives thickened and dried.
