PURPOSE:To obtain the titled substance having promoting action on multiplication of Lactobacillus bifidus in the intestine, cholesterol lowering action, etc. in an easily handleable powdery state, by crystallizing, solidifying, and aging a fructooligosaccharide solution containing a large amount of nystose, powdering the prepared substance. CONSTITUTION:A fructooligosaccharide solution containing >=60wt% nystose shown by the formula is concentrated into 75-90wt%, preferably 75-85wt% solid concentration. Preferably 0.1-10wt% seed crystal containing crystal nystose is dispersed into the concentration solution, fructooligosaccharide is crystallized, solidified, and aged. Preferably after it is dried, it is powdered.
