PURPOSE:KONJAK that is made from a KONJAK powder, a yam powder, Kureingel PC4 (a sea weed extract which is used as a thickener), starch such as corn flour and sodium glycolate, thus showing good restorability after frozen, water retention and good seasoning. CONSTITUTION:(A) The first aqueous solution containing corn flour, yam powder and sodium glycolate and (B) the second aqueous solution containing KONJAK powder, kureingel PC4, preferably 20-30wt% based on the KONJAK powder are mixed, then (C) aqueous lime, e.g., of 20wt% concentration, is poured into the mixture to form gelated KONJAK. EFFECT:The resultant KONJAK has smooth surface and improved luster and is economic, because it contains decreased amounts of KONJAK powder. |
