PURPOSE:Raw octopuses is minced into paste and the paste is combined with a small amount of ground walleye pollacks and starch, then the mixture is formed and heated to give steamed fish paste with improved elasticity. CONSTITUTION:Raw octopuses are seasoned with salt, internal organs, eyes, bill are removed and minced with a high-speed cutter into paste. Then, a small amount of antioxidant such as ascorbic acid and a bleaching agent such as sodium sulfite to prepare the starting material for steamed paste food. Then, the material is combined with 5-20% of ground walleye pollacks and 5-20% of starch, formed into a desired shape, when necessary, sliced, then steamed, fried, roasted or smoked to give the objective paste food. |
