PURPOSE:A fine KONJAK powder is mixed with water at a specific temperature under stirring into a slurry and aqueous lye containing sodium carbonate is admixed thereto under stirring to effect gelation, then the excessive lye is removed with boiling water to give KONJAK of good quality and taste. CONSTITUTION:A fine KONJAK powder is admixed to water at about 40 deg.C and stirred until they become just like glue. Then, a lye which is prepared by adding sodium carbonate to hot water is added to the mixture. Then, the lye is removed with boiling water to give the objective KONJAK. EFFECT:The product is eatable raw without cooking, because it has no lime smell and good texture, moreover it can be made by hand. |
