PURPOSE:To prepare a sausage, by concentrating blood plasma >=2 times by ultrafiltration, and using the concentrated plasma as a subsidiary raw material substituting a part of the raw meat. CONSTITUTION:The blood of slaughtered animal is concentrated >=2 times with an ultrafiltration membrane, and the blood having high protein concentration is used as a subsidiary raw material in an amount of about 10wt% to prepare sausage. |
