PURPOSE:To provide a fried and sweetened potato which is an alkaline health food effective for the prevention of hypertension, etc., by using sweet potato or potato as a main raw material, and adlay, wheat flour, black sesame, and lemon juice as subsidiary raw materials. CONSTITUTION:A mixture of 1pt. of wheat flour and 1pt. of the powder of sweet potato or potato is incorporated with 1% black sesame, 4% adlay, and 0.5% baking powder. The mixture is added with water, kneaded until the mixture becomes plastic, and extruded in the form of noodles. As an alternative method, the above dough mixture is formed to a broad belt, slit with a slitter in the form of noodles, and cut to about 3-5cm length. The formed mixture is fried in e.g. soybean oil, etc., dressed with a liquid muscovado added with 3% lemon juice to a desired thickness, and dried to obtain the objective fried and sweetened potato. All the raw materials used in the above process are useful as health foods, and a cake suitable for the prevention of hypertension can be prepared thereby. |
