PURPOSE:To obtain uniform nonfried instant noodles, capable of highly swelling, and having a short reconstitution time and a soft sense of eating, by predrying previously steamed or boiled noodle strips to adjust the moisture thereof, irradiating the adjusted noodle strips with far infrared rays, and heat-treating the resultant noodle strips with microwaves. CONSTITUTION:Noodle strips obtained from a raw material consisting of wheat flour, water, etc. by the conventional method are steamed or boiled, predried by the usual hot-air drying, etc. to adjust the moisture thereof to 10-15%. The resultant noodle strips are then irradiated with far infrared rays and heat-treated with microwaves to give the aimed instant noodles. EFFECT:The heat-treating time with microwave can be reduced, and cost can be saved. |
