DRYING OF RAW MATERIAL OF PICKLE

摘要

PURPOSE:To prepare dried vegetable for pickling, having soft tissue and excellent quality, by contacting and dehydrating the raw material of pickle with a polymeric water-absorbent through a water-permeable film. CONSTITUTION:The raw material of pickles such as Japanese radish is made to contact with a polymeric water-absorbent (e.g. polyacrylic acid) through a water- permeable film (e.g. cellophane) and dehydrated at normal temperature. A dried vegetable for pickling having soft tissue and excellent quality can be prepared by this process.
