PURPOSE:To prepare delicious TENPURA without deteriorating the color, taste and flavor of the raw material, by contacting a frozen fish or shellfish through a water-permeable film with a polymeric water-absorbent, thereby effecting the thawing of the fish or shellfish under dehydration. CONSTITUTION:Frozen fish or shellfish or half-cooked fish or shellfish is made to contact with a polymeric water-absorbent such as sodium polyacrylate, carboxyalkylcellulose, etc. through a water-permeable film to effect the thawing of the fish or shellfish at normal temperature or under refrigeration while proceeding the dehydration of the fish or shellfish. The thawed fish or shellfish is cooked, coated with the coating of TENPURA, and fried in oil. |
