Method for preventing a reduction in activity of an enzyme

A method for preventing the reduction in the activity of an enzyme owing to a substrate in an enzyme reaction in aqueous phase is described and comprises adding to the reaction system an organic solvent which is immiscible with water but miscible with the substrate and, in this way, reducing the concentration of the substrate in the aqueous phase to below the concentration at which the activity of the enzyme is substantially inhibited.
