PURPOSE:To obtain the cake of the bony part of fish without emitting ill odor nor generating filthy water, by fermenting the bony part of fish in a closed vessel in an atmosphere having an oxygen concentration of >=50%. CONSTITUTION:Roughly crushed bony part of fish is sealed in a vessel together with a moisture-controlling agent preferably fish meal, rice bran, etc. The vessel is evacuated and replenished with oxygen to attain an oxygen concentration of >=50%. The content is fermented for about 24hr at about 40 deg.C while being stirred thoroughly preferably once every 3hr. The fermentation product is dried and pulverized to obtain the objective treated bony part of fish. |
