PURPOSE:To provide an easily cookable food with little generation of drip, by contacting a perishable food with a polymeric water-absorbent through a water- permeable film at normal temperature or in a refrigerated state to reduce the water-content of the food to an intermediate level, and freezing and storing the product. CONSTITUTION:A perishable food such as fish, shellfish, cattle meat, etc. is made to contact with a polymeric water-absorbent (e.g. polyacrylic acid) through a water-permeable film (e.g. cellophane) at normal temperature or in a refrigerated state, and the product having a water-content reduced to an intermediate level is frozen and stored. Since the free water of the fish or cattle meat can be removed uniformly from the inner side, the water-content of the meat is lowered uniformly, the amount of frozen free water in the freezing process is decreased remarkably, and the cause of the dripping in thawing of the food can be eliminated. Accordingly, the taste of the thawed food can be improved.
